Day 18.

I have survived 18 days of an extremely strict diet. This really has consumed my life the past few few weeks so I haven’t been blogging much. But, I am over the hump and only have 12 days left! I have not cheated at all, although I desperately want to. Mainly for the food but also for the ease. This diet also means I have not eaten out in 18 days!! For someone that eats out at least once a week an often times more, this is hard. That also means I have to plan and think about every meal I eat. That in itself is exhausting. Grocery store trips are painful looking at all of the food I can’t eat. It’s more mental than physical. If your wondering about my diet and haven’t read my previous blog post take a look here.

But in the last few days I have experimented with some “treats”. I made a cheesecake and banana blueberry muffins that are part of the specific carbohydrate diet. That means no flour, cream cheese or sugar. I used almond flour and honey and some other tricks. They actually came out pretty good!

This has seriously been hell. I am hoping that at some point I switch over to thinking I don’t need that food but at this point all I can think about is need need need!

I need biscuits. I need pancakes. I need breakfast sausage. I need wings. I need ranch. I need french fries. I need chocolate. I need them all in my veins!

And what keeps me moving forward is always thinking it could be worse. A lot worse. This isn’t that bad.

So keep pushing through whatever hard time you are going through and I’ll do the same.

    Oh my goodness. That’s… Intense. Seriously, I don’t know how you do it but I have faith you’ll finish it!

    I made some yummy no bake chocolate gf/dairy free cookies with my class recently. It’s hard to find recipes that can fit all of their dietary restrictions, but these two recipes are tasty. I don’t know if you can do PB, but if not another nut butter would probably work. If you can’t do any nut butters… oh geez. I’ll weep for you.

    no-bake chocolate-peanut butter cookies…
    1 c rolled oats
    1/2 c crisped rice cereal
    1/4 c shredded, sweetened coconut
    1/2 c chocolate chips
    1/4 c peanut butter
    1/4 c canned unsweetened coconut milk
    1/8 tsp salt
    combine the oats, rice cereal, and coconut in large bowl. combine the choc chips, pb, coconut milk and salt in a saucepan. heat over med heat til choc melts and mixture is well combined. pour the choc mixture over oat mixture and stir to combine. spoon 1 heaping tbsp onto baking sheet lined with parchment paper. chill cookies on baking sheet for 15-20 mins til set.

    And, this:
    cinnamon-almond cookies…
    1 c roasted, salted almonds
    3/4 c sugar
    1/2 tsp cinnamon
    1/2 tsp vanilla
    1 large egg
    cooking spray
    preheat oven to 325. pulse the almonds in a food processor til they form a very fine powder-like meal (but be careful not to make almond butter by pulsing too much). transfer almonds to a bowl and stir in sugar, cinnamon, vanilla and egg. line 2 baking sheets w/ parchment paper. lightly spray hands with cooking spray. roll 1 heaping tbsp of mis into a ball and flatten to 1/2″ thickness (leave room for cookies to spread). bake for 20 mins or until golden.

      Thanks for the suggestions amber! I bet those kiddos loved the treats you made. And I understand trying to meet the kiddos allergies. Unfortunately I can’t do oats, no sugar, no soy, no chocolate and no rice cereal. Sooo that kind of limits things! But there are more recipes in my book that I need to try. I feel like I need to quit my job just to be able to have the time to prepare food for myself! Ha.
